These heirloom Scottish Oats have won critical acclaim and are unlike any other oat we've ever eaten. They're a variety of oat grown in partnership with a family farm here in Illinois. People often ask us how we get them to taste so good. A small part of it is the recipe- but a larger part has to do with the growing, variety, and milling.

FLAVOR:
The terroir from these oats really shines through. It changes year to year but this year's crop has notes of cinnamon and vanilla. They're milled in small batches to keep them cool and to minimize oxidation which decreases aroma & flavor. 

THE GRIND:
we use a stone mill to coarsely crack our whole oats similar to steel cut oats but even better. The cracking technique we employ leaves fine oat particles that make our oats extra creamy.

STORAGE:
for best results, store in the freezer and use within 6 months. Otherwise, store in a cool dry place and try to use within 3 months.

COOKING:
recipes can be found on the "Recipes" section of our site. However, keep in mind- these are traditional oats and not "quick cooking." They take about 30 minutes but once cooked- they can last up to a week without getting too soggy.
