This Orleans Variety of whole wheat is grown on small family farms in Wisconsin and Illinois and is the most flavorful wheat variety we've every tasted. We use it for our breads and we blend it with pastry flour at a 50/50 ratio to make our All-Purpose flour.

PROTEIN: 13.8% this is slightly lower than some years so we suggest either adding vital wheat gluten or another high protein flour to bread recipes. This flour works very well with autolyse based recipes.

THE GRIND:
we stone mill it whole leaving the brand and germ in the flour. Stone-milling gives our flour a toothsome texture that works very well for rustic style breads. We also mill the flour slowly and in small batches at a low temperature. This method helps slow down oxidation of the flour which protects the flavor and shelf life of the final product.

STORAGE:
for best results, store in the freezer and use within 6 months. Otherwise, store in a cool dry place and try to use within 3 months.

COOKING:
recipes can be found on the "Recipes" section of our site. However, keep in mind- these are traditional oats and not "quick cooking." They take about 30 minutes but once cooked- they can last up to a week without getting too soggy.
